Food For Fitness: Zucchini Fritters and Spicy Whipped Feta

Add excitement to your veggie routine by trying these tasty Zucchini Fritters with melt-in-your-mouth Spicy Whipped Feta. They're so delicious, you'll think there's no way they could be good for you! This summer squash is actually a great low-carb source of thiamin, niacin and pantothenic acid. It's also a decent source of fiber, protein, vitamins A, C and B6, folate, iron, magnesium, phosphorus, potassium, zinc, copper and manganese. ZUCCHINI FRITTERS Yields 12 Fritters
INGREDIENTS:
1 lb zucchini, ends removed, shredded
1 tsp fine sea salt
2 scallions, minced
2 tbs dill, fresh, minced
2 large eggs, lightly beaten
1 garlic clove, minced
1/4 tsp pepper
1/4 cup almond flour
4 tbs butter INSTRUCTIONS:
Toss the zucchini with salt and let sit for 10 minutes. Next, squeeze the liquid out of the zucchini and dry thoroughly with paper towels. Combine all of the ingredients except the butter, and form into 12 even-sized fritters. Heat a 12-inch non-stick skillet over medium heat for 5 minutes. Add half the butter and half the fritters. Use a spatula to press the fritters flat into the skillet. Sauté until golden brown, about 3-4 minutes per side. Repeat with the remaining butter and fritters. Serve with Spicy Whipped Feta. SPICY WHIPPED FETA Yields 2 Cups INGREDIENTS:
1 lb feta cheese, crumbled (about 4 cups)
1/3 cup extra virgin olive oil
1 tbs lemon juice
1/2 tsp cayenne pepper
1/4 tsp black pepper INSTRUCTIONS:
Run the feta under cold water to prevent the dish from being too salty. Next, add all of the ingredients to a food processor and blend until smooth, about 30 seconds. Transfer to an airtight container and refrigerate until firm, about 2 hours (up to 2 days). Sprinkle with additional cayenne pepper before serving.
