Food For Fitness: Homemade Strawberry Ice Cream with Dark Chocolate

With hot weather, pool parties and Summer vacations, it's nice to have a healthier treat to indulge in that satisfies your cravings while keeping you cool. Few desserts are as irresistible as homemade ice cream. No more low-fat, high sugar, store-bought junk filled with skim milk, corn syrup and ingredients you can’t pronounce. Although the idea may seem daunting, making fresh, flavorful, homemade ice cream is easier than you think. In fact, all you need is a blender and some high-quality ingredients. Now you can enjoy something sweet without breaking a sweat! Time: 5 minutes Serves 2 INGREDIENTS:
1 cup Organic heavy cream or full-fat canned coconut milk
Stevia (plain or flavored) to taste
1 tsp Cinnamon
2 tsp Vanilla extract
2 cups Strawberries, frozen
1 Banana, frozen
4 oz Chocolate, 88% dark INSTRUCTIONS:
Combine all ingredients in a blender except half the fruit and the dark chocolate. Blend for one minute, pushing down the edges with a spoon. Add the remaining fruit. Blend for two more minutes or until thick and creamy, like soft-serve ice cream. Add more strawberries to thicken or more cream to thin. Taste and adjust accordingly. Enjoy with melted dark chocolate sauce. NUTRITION HIGHLIGHT:
